Pan Seared Sea Scallops

Hey guys! Today’s recipe is a little piece of Heaven from the sea’s….. scallops.

Pan Seared Sea Scallops:

-1 pound of sea scallops

-1 tablespoon of salt

-1 tablespoon of pepper 

-2-3 tablespoons of butter

-1 tablespoon of olive oil

-1 grill pan or pan used for searing (if you have a cast-iron, use it)

Wash the scallops and pat dry thoroughly. Season all the scallops with salt and pepper (each side of the scallops). Put the olive oil and butter in the pan and put on high heat. When the butter has melted and starts crackling, add the scallops. Keep on high heat the whole time. Leave the scallops for 2 minutes untouched. After two minutes flip and leave for another two or so minutes. You want the scallops to still be soft in the middle but not so soft that they fall apart. 

These are heavenly! I have been serving them with a small baked potato with lite sour cream, and a vegetable. SO GOOD!!! You definitely want to serve right away so that they are hot. You don’t want these babies sitting around getting cold on the counter. I’m including the real picture below, but I’m no professional photographer! Sorry for the mess and the blurriness!
